I noticed that the firewood in fireplaces... or basically wood that is burning are extremely pink? I created a mod where I added a house in RIverwood and made a nice fireplace, but the wood or texture got a light - pink glowing colour but the flames looks normal... it seems to be the same issue where ever there are firewood.

Any information / solutions regarding this?

It's a confirmed bug. It has been discussed quite a lot since the DLC got released and you would've gotten a faster answer by searching the forums, instead of making a thread and waiting -oh, did I mention double-posting?

Now, what you CAN do about it: download this gentleman's http://skyrim.nexusmods.com/downloads/file.php?id=8236 and ofcourse, take your time to read what he says in there, before installing.

Alternatively, untick the HD texture pack mods in the Skyrim launcher.
