I have never had problems with dragons not giving me souls aftter me killing them before, but now all of a sudden the dragons that respawn at Bonestrewn Crest (at least two different types of dragons) will not give up their soul to me. I have killed several other dragons of different types in other locations and have had no problems at all, but now for the third time in a row the dragon at Bonestrewn crest refuses to disintegrate and give up its soul. It only happens with these particular dragons for some reasons. Any bright ideas as to why?

Yep. It's looking like it's a bug. There's a flag that gets set on each dragon when you kill it and absorb its soul, and that flag isn't getting reset if the dragon respawns. See https://unofficialskyrimpatch.16bugs.com/projects/7078/bugs/211392 for more information.
