Says I have 14 Shouts learned and 15 Shouts unlocked...what? Also, when I add up quests completed it totals 43, but it says 42 completed in the quest log.

Probably means you have unlocked a shout from a word wall but not used a dragon soul to learn to use it. No idea on the quests

No, I have 14 Shouts learned and I unlocked all 14. Some of them I have multiple words for and haven't unlocked all of the words for a given Shout, but I still have the first word unlocked at least.

You dont unlock unrelenting force, its gifted to you thats why there is a discrepency of 1 shout.
