When I go to buy Vigilance, it's telling me that I already have an animal.

At one point (probably about 60 hours of gameplay ago) , I *did* find a stray dog that started following me around for a while and then seems to have buggered off to who knows where and/or died after I entered a dungeon (don't remember which one). This dog was following me around prior to receiving "A Daedra's Best Friend"

Anyone have any suggestions on how I can fix this, or where I might find the aforementioned stray dog?

Have you completed the quest "daedre's best friend"? Because that will automatically cancel any pet purchases as the "best friend" counts as a companion while this quest is active.
