And i was wondering if a Gigabyte GeForce GTX 560 TI OC Graphics card and a Intel I3-2120 CPU Will work fine for gaming and for Skyrim specifically

I will post full system specifications that i plan to order if anyone asks.

The best place to post this is in the Will My PC Run Skyrim thread at the top of this board.

But I will say that GPU will do nicely, but I'd recommend getting a quad core CPU, if your budget allows an i5 2500, if not go for a Phenom II like mine :)

I have an i3-2120 and a GTX 550 Ti - I can run 1080p at ~60fps with all settings at ultra, except AA which I've got turned off but using FXAA. So with the 560Ti being tons better, and the same processor, you should be fine! Pretty much everything else I play runs at max settings too, though obviously this won't last long as the specs are at the low-end of being good...
