I was wondering when you enchant an item can you name it something to your taste or are you stuck with the default name?

you can call it whatever you want.

If you look on the lower left hand corner of the screen it will display the corresponding button to press to rename it

You can not only rename the weapon, but if you name it something cool enough the game will give bonus enchants to it.
Just kidding.

use what ever key is bount to toggling view point (first person thrid person). By default this is the f key on pc

just remember you have a time limit in seconds if you use an enchanter's elixir!

Yes, there is a time limit with potions... but the time pauses while you rename!

The time limit does not matter after you select soulgem and enchant, select an gem, typicaly an grand or black gem, then enchant like frost damage, then reduce power to get more charges if you want. Now the effect is locked so you can take your time select weapon and rename it. However selecting another enchant or gem will recalculate and you will lose the potion bonus if you has used to long time.
