So the only weapons in the game are the crafted ones? Mostly the bows... Or are their random drop weapons that cannot be crafted? Armor too and I don't mean enchanted crafted ones.

There are tons of non-crafted equipment in the game.

I mean like end-game stuff... Or maybe there isn't end-games stuff in skyrim?

but u can upgrade ur weapons, like the deadric bow, to legendary with smithing

Most gear you find is craftable. Even a lot of the enchanted gear is a normally craftable item with an enchant that you could put on it yourself. There are several unique items like the Daedric items and a few other quest specific items.

End game stuff...pretty much no. The glass weapons I've forged for myself are much stronger than even the weapons you get from Daedra. Had I gone up the right side of smithing to get ebony they'd make the Daedra weapons look like crap I'd assume.

I really have not seen that many items, even daedric quest items, that match up to a maxed out enchanted daedic weapon.
