First of all, I'm at work and UESP is blocked here. I'd be happy to look it up myself, BUT as that's not an option. I'd like to ask... What's the replenish time for:
1. Alchemy ingredients (flowers, nightshade, cotton...)
2. Farmed items (Leeks, Potatoes, nirnroot)
3. Ore

Anyone?

I think it was three weeks in-game for the world to repopulate. It may vary though, I'm not quite sure.
