Don't get me started.

...

Ok, I will start. It's not exactly doable. There was a time when the standard Nord concept was this:

http://images.uesp.net/f/f1/Lore-race-Nord.png

But in this game, they're weathered, cross-eyed, blockheaded neanderthals.

You can't even make someone slightly old, but action hero-ish (like, say, Dolph Lundgren, who's a Nord in real life. Or the guy who played Thor).

Nord females actually look like standard "Valkyrie" types, but they seem to have an entirely different artist. Even the Nord female heads are bigger, for some reason. I can only guess that Bethesda's resident fool had seniority, and took control over how Nords would look. "No, no. I get to do the Nords. You all can do the rest." And now we have to deal with their stupidity and lack of talent. Because, for some reason, every single other race is great.

Of course, some people like them too. So whatever.

Yeah, its hard to make youger looking characters, esepcially Nords and Dunmer. The closest thing to an age slider is the complexion slider I tried adjusting all sorts of things on my Dunmer. Cheekbones, brow, chin. Nothing had much of an effect.

Try Imperial, with palish skin. If not that, Breton.

Your best bet is going to be a Breton, I think.

I'm pretty good at this and the best I can get is a mature, "kingly" looking Nord male.

Younger people have their facial features lower on their heads, fuller cheeks, fuller lips. Look at the facial proportions of the person you are working from and try to match them. THEN worry about complexion. Redder skin looks younger than paler skin.

I know what you mean.. it's the pores. I think? It's slightly less accentuated in the game though, especially in the outdoors. Females just don't have that problem at all.

The main reason I suggest them though is that they have fairly standard human features and proportions, like the actor in your pic. No gigantic noses, etc..

Nords aren't ment to be fair haired people who are similar to Vikings and love to battle and like their mead hard. Why would they look like that young warrior who looks like he took a bath recently and is in a battle?

That still doesn't dictate face shape. My dad's side of my family are all crazy beer guzzling Danes, but they don't have cross eyes or neanderthalish appearances. Seems like the artist had no idea what a Norse or Germanic look is, and instead just made tall dwarfs. This is just a game anyways. They could at least do with a few cool looking action hero types, like you'd see in a film ((to name a few Viggo Mortensen, Dolph Lundgren, Alexander Skaarsgard.. they're all Scandinavian). I bet the guy who plays the dovahkiin in the live action trailer looks nothing like a Nord in game. The Nords in game tend to look like this wrestler I liked when I was a kid.. Hacksaw Jim Duggan.

It's cool for a second, but not exactly what I want to be limited to.

Try using skin mods at Nexus. There are quite a few which make your toons young looking like in their 20's

Dude.. you could waste your time thinking about it for months. Try not to.

All I can suggest is rolling with an entirely different concept. Which svcks, because TES is supposed to be about Freedom. But it's not really. You have to play along with their own way of doing things somewhat. In the case of Nords, a lot. If you want a Nord, just make him bearded and deal with the older look. Depending on how you do it, it'll be lumberjack-ish or "kingly" as someone mentioned above.

Or play with another race or gender. It's funny to me how I can just take an Orc, Khajiit, or any female human and work with a preset fairly quickly. It's hassle free. And at the end of the day, it's better to just play the game.

dragsaw, if you're on pc there are some mods to "help" with younger males. I don't know that there's much you can do if you're on console though.

I had to look at my Male mage and I hadn't thought he looked all that old, but I did give him laughlines on purpose as I wanted an "older" looking char.
I was going for 30's but i'm bad judge of age in RL so he may look older to other ppl. He's a Breton.

I think I put a bit more color on his face than I usually do my female char's.

This is a quick-and-dirty, close as I could come with a mod I found on the nexus (to smooth and "youth" the male face textures):
