Enter Ulfric's castle and kill him? (meanwhile the Civil War is going on)
Just like that..

Walk in, draw the bow, aim'n shoot and then end up killing him?

What outcome would that give you, and how will it effect the story? (If any at all)

He's marked as essential by the game, so you can't kill him at that point.

slaughtering the entire city before getting to the ending point of the civil war also doesn't make it easier for the imperial army to siege windhelm

why can't the dragonborn do the same thing, go in Windhelm, challenge him. let's duel it.

Well, since the questlines are virtually identical (only the names have been changed to protect the.... um.... well....) yep, that would be good - duel either of the leaders.
