THe best parts of Skyrim IMO are stuff like this, just the way the world goes about it's business as you wander around.

My favorites so far have been, hired thugs sent after me after stealing stuff, and giant vs. dragon.

You know what would be cool? Being able to fish! I see all those salmon and found a fishing pole but couldn't use it... I would have another reason to quit my job and stay at home forever.
You can, you just have to fish like a man and jump in to grab them.

Birds flying around and landing/taking off from nests

Spriggans melting out of trees.

Dragons sleeping in open fields, yes SLEEPING.

Selling a crap load of very expensive items, practically giving them away. only to come the next day and see that the shopkeep sold them and got a ton of gold.

The general design of the World.

I see what OP is getting at, but man I've learned to hate the word imersive, which applies to everything from crossword puzzles to kids watching ants.

2. Was climbing down the side of a mountain when I saw a bird flying below me. I wondered if maybe I could kill it with my arrows from above. just as I was about to fire, I saw it land on a nest in tree! I had no idea the birds actually nested. I thought they just flew around forever! Very nice detail indeed. I then killed the bird- Just joking, I decided not to.
I haven't seen a bird that landed and I never thought they'd land. Which mountain or what is the area that you saw the bird and the nest?

Look down at manhole covers in solitude, you can hear water gushing underneath them

Right after you cross the bridge out of Riverwood on your way up to Bleak Falls Barrow.. There is a hawk cirkling.. sometimes it lands in its nest, sometimes it doesnt.

A bit anti-immersion but...levitating mammoths.

I also came across a group of Forsworn living in harmony right next to a hagraven's camp. Killed them both after dying a few times.

There are some beautiful waterfalls though. The level of detail put into the landscape is amazing.

If Sven in Riverwood becomes your follower, you'll soon discover he prefers steel armour and two-handed weapons over anything else. Even if you give him other weapons or armour, while he has steel armour and a two-handed weapon equipped, he won't change into them! You have to remove them from his inventory before he'll wear anything else you give him.

Beautiful details :)

Real spiders do salivate btw.
I once saw a documentary about a portia-spider on the hunt.
It saw its prey, sized it up and started salivating in anticipation.
mm yummy prey.

The sheer amount of random stuff you see while traveling is amazing. Makes fast travel pointless.

This, people I know brag about how awesome their high level characters who can one-shot anything etc. are, but I'm happy with my level 23 Nord who has actually done and seen things that they never will, simply because they just fast-travel to the next quest objective, rather than walking it out and enjoying the amazing world in this game

it's isn't very realistic how almost nothing you do really matters and how no one properly recognises it.

You should get out more.

A little thing that I noticed impressed me. I was walking along the road near Morthal one time, enjoying a relaxing stroll. When a spider seemed to come out of nowhere and attack me. I killed it swiftly (I play on Novice lol). So I thought 'That was strange, did it jump out of the snow or something?'

I forgot about it and moved on. I played lots of quests and did general things after that. It was about 100 (in-game) days later that I was walking along the same road outside Morthal when I neared the area of the first attack. I stopped and glanced over at the snowberry bushes that line the road. I was just quick enough to see a spider running into the bush and suddenly standing still. I didn't move and it just waited there! It was really hard to see it, as its black thin legs blended in with the snowberry bushes perfectly!

It just stayed perfectly still and didn't move for ages. Eventually I started walking towards it and it jumped out at me!
There's these rust-colored ferns, especially prevalent in the Rift, that look just like crouching spiders to me. Not surprisingly, they're often in areas where there are lots of spider encounters.
I love that.
