Mammoth Cheese or brains?

Looks like brains, which has been called 'head cheese'. Used to be a 'delicacy' before the various wasting illnesses were understood. Anyway, my son and I were wondering if the Mammoth cheese was cheese or 'sweet breads'?

Giants use Mammoths as cattle. Mammoths are mammals. Mammals give milk. Milk can be made into cheese, it doesn't spoil for longer. The presense of Mammoth's cheese is kind of not surprising at all.

I'd say "We can tell because it tastes like cheese", but giant's toe tastes and smells of cheese too...

I think there's also the possibilty that "mammoth cheese" is head cheese. I.E., a big ball of meat scraps pressed into a cheese-like shape. Scrapple, for those of us who live in parts of the South with enough older country folk for it to be in the grocery store.

Brains and eyes are usually removed when making head cheese. Depending on the person, they are used in another dish or discarded.

Head cheese is basiclly the meat from the head with some of the geletin created by boiling it.

True. People still do eat brains (from some animals) but it's a separate thing from head cheese. I suppose people don't eat cow brains any more because of the potential for Mad Cow Disease, and there's the wasting sickness for deer (similar prion-based disease) so I'm pretty sure nobody eats deer brains. Pig brains, I suppose, are still eaten.
