Make a Necromancer, those are usually fun. Haven't tried it in Skyrim yet, but it looks promising.

Make a jack-of-all-trades character. Heavy armor battlemage or an assassin type with illusion/alteration support.

Or just use everything and spread your perks really thin, it requires decent gear and a high level (many perks) to really shine though. At least leveling is easy since you're using everything.

Why not try roleplaying? Make characters with a unique personality, a specific agenda, likes and dislikes, strengths and weaknesses, all that good stuff. It's way more entertaining than just "Necromancer."

Have you tried a pure Priest/Healer?

A companion of course is a must, but you could focus on things like Regeneration, Turn Dead, etc.

One Hand Weapon Skill (only for Maces), Light Armor or Clothing only, no Sneak, no Archery, no Smithing, Enchanting and Alchemy ok, and perhaps Speechcraft, no Lockpicking or Pick Pocket

whatever playstyle you are most comfortable playing make a character that will use the complete polar opposite fighting style i was once in a similar position you are in i quickly became bored so i went out of my comfort zone and made a nord berserker no stealth or archery at all freshened things right up.

After I'm done with this playthrough I may go for a bard: one-handed, alteration (for the mage armor), restoration (for the ward), enchanting and pickpocket.

Make yourslef.... Pretend like you were magically dropped off here. Use master difficulty and no HUD for realism, and only use what you can us in real life (if you can't shoot a bow accurately IRL, than you shouldn't use a bow). Try to make it to safety in the cities without

Heavy armor and summons, maybe try bound blade or one handed.
Maybe some restoration and alchemy and make a summoning witchhunter that uses the art of or the conjuration against those that perform the dark arts and necromancy. (You use atronachs and the Dremoras.)
