Ok so I wanted to store all my books in my chest in breezehome, I put all my bountys in there including an active one, I slay the giants I need to slay yet it tells me I need to slay them. I go back and take the bounty yet I still cant slay the one it tells me to slay. Is this a bug?

Make sure quest markers are active for the bounty objective. If it says 'Kill the giant' or something, it means just that one specific giant, even if there are others around. If I had to guess, I would say that you didn't enable the quest markers, and you just haven't found the one giant at that place that counts.

I fast traveled to said spot, killed 2 giants and 3 mammouths... Will try again tomorrow and my quest marker won't let me set it, like if I set it it won't give me a destrination

I have had one of these glitch. I just loaded a save from before I showed up at the camp and it was fine.

yeah too bad I did like 3 hours of questing after I got the bounty

Being the Guildmaster of the Thieves guild, and the Leader of the Dark Brotherhood, I paid him in steel (or ebony actually) then proceeded to loot his corpse and leave him naked by the roadside.
