I was wondering how many insects or animals are in Skyrim? Living ones, and mostly real (so dragons doesn't count), but the mammoths do.

Two butterflies, plus luna moths and torchbugs, three bears, two cats, two wolves, two foxes, rabbits, horses, mammoths and hawks. I think that's about it for "real" animals. Chaurus (two types) and Frostbite Spiders (three?) could conceivably count. Think I got everything.

Shoot, yeah, dogs, chickens, cows, salmon. The "ingredient" fish (two?) look enough like real-life fish (i.e. guppies) that they *could* be considered, though nix the slaughterfish. If you fancy giant rats, you could add in skeevers too.
