Maybe not so much builds as classes, because two identical builds can feel quite different from eachother when RP is factored in.

Zen Archer: my first major RP character. He was an archer monk, inspired by http://en.wikipedia.org/wiki/Kyudo. He perked archery, alteration, restoration, and enchanting (so he could wear black robes). Only way I found to RP a cloth-wearing monk in this game due to no unarmed skill.

Battlerager: this is inspired by a DnD prestige class of the same name. Basically, they are slightly insane warriors who jump on their opponents and dilacerate them with their ridged and spiked armor (including spiked gauntlets). Perfect excuse to use the unarmed perk in the heavy armor tree (as well as Reflect Blows). Khajiit would fare better but orcs would make for far cooler battleragers. Mix with blacksmithing and enchanting to make it viable. Perhaps use destruction cloaks as well for added pain.

Forsworn Torturer: the personification of evil. A man so nasty, even the other Forsworn were afraid of him and cast him out. He uses a single dagger, which he uses to sneak attack unsuspecting opponents. He loves to paralyze opponents with high level poisons and then torture them slowly with flames or arrows. He also practices necromancy. His favorite thing in the whole world is to enter a house with a couple, kill the husband, then raise him and have the zombie kill his wife. He collects human hearts and other gory collectibles which he uses to perfom horrible rituals. He also dabbles in illusion and will not hesitate to cast Frenzy in an inn to start a massive brawl. Basically, he's your worst nightmare. Did I mention he practices vampirism?
