I saw a horse riding a horse once. Not in a dirty way, either - one was draqed over the other's saddle cross-wise.

I walked over a dead skeleton and got launched 100 feet in the air and died....damned ballistic bones....

There was a mammoth and a giant fighting a dragon in the plains near Whiterun, the mammoth was standing on a small ledge over the dragon and giant who were focusing on each other, when the mammoth went to attack the dragon he literally walked right on top of the dragon...and then the dragon took off.Needless to say, it didn't end well for the mammoth.

I was walking around near White Run with Lydia, when a mudcrab decided to attack. Since such a creature was below my attention I just kept walking and allowed Lydia to slay the beast. When the deed was done, we continued on. Suddenly I saw the same mudcrab, who was now quite dead, begin floating past me in a UFO-like pattern. It floated high into the sky and travelled in the same direction I was heading. I followed it for awhile, and it eventually made a gentle landing in the middle of a bandit fort.

Strange.

Dragons having hearth atacks.

I saw a riften guard take 3 imperial guards near a mill.
and I had a spider following me from riften all the way to the tower (don't remember the name, but on the way from riften to whiterun)

The game dropped a dead giant right on the front steps of Whiterun.
And this was fairly disturbing:

I played skyrim for an hour and didn't get any lag

Random Wolly Mammonth falling out of the sky.

Happened today for me in the northern regions. Some massive rumble sound I have never heard before, and I'm pretty close to 300 hours played. I have no idea what it was though, dragons haven't been released yet for my current character (lvl 33).

Probably a Draugr death lord making that Rumble.

Tried out Wabbajack.... it ended with horses slidnig on the ground, a chicken turned into a Dremora and is very pissed, and a Man turned rabbit being chased by said Dremmora...

when i tried out the wabbajack i had a dremora chasing me through solitude with bunnies running left and right from my stray wabbajack casts, and one pile of ectoplasm and 50 gold coins that i think used to be a guard

Sometimes the icebergs make loud noises.

Killed an NPC by accidentally kicking a kettle at their head.

The strangest thus far: A hen disappearing through the ground after I hit it.
