1.Dragons, the quantity of them may be a little excessive... but you never forget that Skyrim is about Alduin and Akatosh's kin.
2.Character builds, you can make so many builds that just aren't available elsewhere.
3.Dual-freaking-wielding.
4.Actually having to equip spells, them having casting times, and the aesthetic they are delivered with.
5.The scenery.
6.Falmer.
7.Improved graphics in the sense of how faces look.
8.2H'd weapons are dangerous now, for NPC as well as player.

9.Ohh... the Dungeons.
10.Enchanting and Smithing.
With this being the 'Ultimate' Skyrim thread, here are my complaints :
1. Spellcrafting. Dual-wielding had the opportunity to supplant this with passive or added effects, but didn't for whatever reason.
2. Quests. While some are lengthy, most have a general feeling of the player being rushed through them.
3. Dual-Wielding. There was so much potential here, but it was not capitalized on in the manner I thought it would be.
4. Cities. They could stand to be a bit larger.
5. NPC's and their overly aggresive proximity dialogue. Sometimes they just need to Please continue, my good sir..
6. Enchanting and smithing... for obvious reasons.
7. Caps and rollbacks on skills.
