Max number of stats to specialize in?

So recently I started a very "jack of all trades" type character, whom I intended to specialize in the following:

One hander, Archery, Sneak, Illusion, Smithing and Alchemy.

However I'm thinking that at expert level this might just get a bit too convoluted, with me not having enough talent points to spread around each skill.

What do you think is the max number of stats you can specialize in from the start of the game?

I usually go for 5 or 6 specialties. I just don't "perk" somethings alot until later. Alchemy I usually don't perk or train even though I use it alot. Smithing I take one early and the rest later, I want my weapons, armor and magic skills lvl'd first. That's just the way I do it.
