Awkward combat system

OK so I've played about 40 hours so far, not a lot I know. I've had the game since release but not had much time to invest some serious hours. I'm a level 21 wood elf. I'm going for Destruction/Healing/Archery and Sneak as my main skills. I'm REALLY struggling with some of the dungeons, I have a companion following me so I'm not on my own but some of the end level bosses in the dungeons just kill me stone dead in like 2 to 3 hits.

I find the combat system kind of awkward. I have 8 hotkeys setup but on top of that it's a right royal pain in the [censored] having to keep going back and forward into umpteen menus to add potions and [censored] like that. Feels like the combat system is really stop...start....stop...start. Granted I'm haven't played many TES games before so maybe I'm a complete noob.

When I die I'm like is that me who can't negotiate the menus quick enough? Did I select the right potions? Am I using the correct weapon/spells? Have I levelled my character wrong and I'm trying to do dungeons which aren't at my level?

Any advice appreciated.

Strong poisons and paralysis potions will help and I dont use companions as they tend to negate most attempts to sneak, losing you the damage bonus from the get go.

The game does take some getting used to, that's for sure.

Yes, I also am always having to pull up my Quick menu and select spell, then again to select weapons, then again to select potions, etc.
