Random Assault Charges in Skyrim

Hello all, new to the forums, so if this issue has been addressed previously I apologize in advance. As the title suggests, I'm posting about the seemingly random nature in which the number of assaults in the crimes section of your journal increases for the most random reasons.

I have played multiple characters in Skyrim (Xbox 360 version) and I have noticed that the number of assaults my character had would sometimes increase for doing any of the following:
1) Sneak attacking a wolf
2) Sneak attacking a troll
3) Sneak attacking a spriggan
4) Sneak attacking a cave bear
5) Attacking a giant while said giant was fighting a dragon
6) Attacking a wolf that knew I was there but had not gone hostile (no red dot on compass)

None of the above assaults incurred a bounty (how do you fine someone for assaulting an animal or creature like a troll?), yet they are still counted towards the overall number of assaults in the crimes page of the journal. The silly thing is I have been in situations where I would save my game, see some animal or creature off in the distance, and proceed to sneak attack it with my bow. After said animal/creature was dead, I would open my journal and see that my assault had gone up. I would then proceed to load my game and I would sometimes do the EXACT same thing, only this time no assault after the killing was done. I find it annoying that these kinds of attacks are considered crimes by the game, and that sometimes you'll get an assault added and sometimes you won't. As I'm trying with my current character to keep my number of assaults and murders at 0 ( I know, no Dark Brotherhood for this character), it is very frustrating to see that number go up by 1 every other time I want to snipe some woodland creature. Anyone else experience these kinds of issues?
