Pick two or three skills that define your character, be it restoration, archery, heavy armour, alchemy whatever, so you are an alchemist, knight, ranger, blacksmith, whatever the hell, and have a few more that are just skills you need to survive, who the hell lives in Skyrim and can't use a one-handed weapon?
Paladin : Heavy armour, one or two handed, restoration.
Bard : Speechcraft, illusion.
Healer : Restoration, alchemy (no poison perks).
Ranger : Sneak, archery, light armour.
Rogue : Sneak, pickpocket, speechcraft.
Barbarian : Two handed, light armour.
And so on. Make sure to always use the 'class' skills, and only take appropriate perks, but use whatever other skills you need to learn in the field and use to survive, without worrying too much.

Today I made a rather interesting race/ build combo. It's a typical two handed heavy armor warrior but with archery and restoration. Other than heavy armor I have never used any of those skills yet. Oh and I made a wood elf. I chose wood elf because they don't get bonuses in any of those skills other than archery. I only playes till level 5 or so but that didn't take very long lol with the warrior stone. It's pretty much for role playing.

I suggest you read some of the lore on different classes in games like Warhammer, Warcraft, D&D, or any other game that have emphasis on pre-set classes with fundamental differences in mechanics. I find the lore of classes like the Warrior-Priest, Paladin, Death Knights, Warlocks, Chosen, Favored Souls and any other class that is more than the generic Warrior(not saying they are bad, just that they are a class that doesn't have much lore about itself since it is simply a random-melee guy hat can be from any culture, race or belief) to be good sources for roleplaying ideas.
