Try some kind of a monk character. I mean your primary weapon should be unarmed and in critical situations(Dragons, high-hp bosses and etc) shouts or Conjured magic(summoning Daedra Lord or weapons).

I've been playing a stealthy Wood Elf, mainly using a bow or double daggers. Fun as hell bro.

I'm doing a class I like to call the "Warden".

Works with mainly any race, but I like breton because of the absord magicka ability. It makes mage bosses (ie dragon priests) a lot easier.
Main skills are One handed, archery, restoration, and light armor. Also through in blacksmithing if you like it.

Its really fun. I use bows for range and Healing spell/sword for melee. Its a little bit of everything, but it never gets boring.

You could always try a Cleric build, holy mace, heavy armour, turn undead / heal spells.

Kinda. You should focus on increasing Magicka mostly but also raise Health so you wont get one-hit-killed, in short keep it in 6:4 ratio. As for the skills your primary objective is Conjuration. Restoration shouldn't bother because you need to heal a lot, obviously. Also Smithing and Enchanting should help on your journey. I also forgot about Heavy Armour, put some attention to it too.

But I think there's a prize for all of this, you're risking being weak while having a high level character so be careful on what you do.

I just started a new character. She only uses Bound Sword and Bow (haven't got the bow yet) and using cloth, no amor. My armor will come from Alteration spells. I of course plan to be taking advantage of Alchemy and Enchanting to pull this off in Master difficulty. I'm trying to make this a mage/assassin type character. Not sure if this is something you'd like to try.
