Giants.

If they come for you and manage to hit you, you go for a homerun.

Saw this on a quest near Riften today, mighty warrior go first in and then is hit and sails into the sky. Never found his body.

Tried this in an early game, it is 1-hit kill from the giant. I think I sailed from Whiterun to at least Windhelm..

The only way I can kill mammoths and giants, is sitting on a sloping hill where they can't reach you. Chicken - yeah!

How do you Heavy Dudes deal with them?

Gain some levels under my belt, around 20-25 is enough, get a companion with me, summon an atronarch and just bash away.

they become easier when you get more powerfull, I kill them with 2-3 power hits with my dual welding/light armor char (lvl 46).

until then you can keep lure them where they can't reach you and kill them with a bow.

Forever circle them and move backwards, making full use of atronachs and whatever magic I can use to shoot at them from a distance without slowing myself down allowing them to charge at me. very rarely I attempt to sneak up and use arrows.

They telegraph their swings. Just back up when they get ready to swing and you can dodge the attack. Helps to be in 3rd Person until you get the timing down. This also works for Trolls. Anyway, they are slow to swing again, so you can get in a hit or two before they can attack again.

If you can't tank it (because to low or not your specialty) with no alternate around, use terrain to your advantage and stamp its face with arrows like a wire brush for cleaning armor.

FUS RO DAH to get them off their feet, then lightning bolts, a flame atronach, and Lydia for the win is how my mage handles giants. Stayed away from giants at early levels.

My assassin would sneak up on them for the one-hit kill with his dual-wield Elven daggers. Sneak and archery at early levels for him when ambushing giants.

The heavy armor wearing dual waraxe wielding Orc warrior was going toe-to-toe with giants pretty early, around lvl 15.

I first encountered two at level 5 or something, I managed to kill them by running backwards using flame and my bow.
Countless deaths occured, countless rages also.

But victory was granted to the determined B)

I don't. They never attack me, unless I don't heed their warning signs/come way too close, so I always leave them in peace. Besides, the giants once saved me when I was low-level and being attacked by both a hargraven (you know, sweet Moira) and a dragon, during which they took care of the latter, and the mammoths have spared me some effort multiple times by attacking bandits and the like. Besides, I can visit their camps, and even take stuff as much as I please (again, as long as I don't come too close to them), they're just too nice to my present character. If there was an achievement for "Giant Friend", I probably would've gotten it.

They are not very good at crossing bodies of water (even just a stream) so I just stand on the opposite side and spam them with arrows/magic. Sometimes they get bored and wander off again so just hop across the water and shove a sword into their backside and quickly run away again to the other side like a little girl. Rinse and repeat until dead. Once I had two giants on the go and killed them both at around level 5  Hardly epic but it gets the job done.

I remember kiting the first giant I ever saw, spend like 20 minutes on my mage.
When I killed him I was so happy, until I turned around and saw there was another one coming with two of his mammoth friends lol.

Hit with arrow and immediately hide while sneaking. I was able to croak a few this way. They never located me. If they locate me, I retreat while shooting. The best situation is to find a large rock. Circle. The giant will follow. You can back until you gain a bit of range, then shoot, then retreat again.
