slow down and go explore if you feel like you're going through quests too fast

I talk to everyone in a specific place and take most of the quests before leaving to the next place.

There are 343 discoverable locations on the world map.

You can use that knowledge to gauge how much exploration you've been doing to the number of quests you've completed.

Don't ride a horse, just walk/jog everywhere. Go off the beaten track.

Most of all, make sure you enjoy the views. If you're on the PC, then there are a lot of mods you can use to improve the visuals in your game! Even if you're not, some of the views out there are outstanding!

Once again, if you are on PC, take some photos;

Or this, with the Winterhold Destruction mod - http://farm8.staticflickr.com/7054/6933670824_408ee6169c_b.jpg

Ultimately play it how you want to play it. But if you feel like you're rushing then slow it down a bit. Don't be so "quest oriented". Explore without quests or find some really good major quests (not necessarily main quests). Whatever you do, if you want to feel less like you are rushing it, don't fast travel. That totally takes the wind out of your sails.

I'm on Xbox now but I used to game only on PCs and laptops until 2010. I totally agree with this. Have a dedicated folder on your computer where you store screenshots and spend a lot of time capturing them. Send them to friends, start a blog that tells the story of your character, post them on your blog with your stories, etc. Just get as creative as you can with the game and let your imagination control the game for you, not the game mechanics (i.e. don't rely on quests to drive your game).
