I usually toggle between the Lover Stone (all Skills go up 15% faster, not as good as the Warrior/Mage/Thief Stones, but works for every Skill not just Skills in a certain category) and the Steed Stone depending on my needs at the time.
If I'm nowhere near being able to put a Perk into a Skill (at that mid-point between 'Perk levels'), then I'll use the Steed Stone so I can collect more loot to sell to fund my vast wealth (besides, Ebony Armor is freaking heavy). If there's Skills that I want to definitely work up, or I have a couple of Skills just about ready for another Perk, then i'll switch to the Lover Stone.
If I'm going into a place where I know I'm going to face Draugr Deathlords (read as; I know I'm going to get my ass kicked...), then I'll switch to the Lord Stone.
So sticking with one Stone is perfectly fine, I personally like to take the "what might suit me best" approach to the Guardian Stones depending upon my current situation.
