if you've gotten every achievement in the game and have beaten every quest there is to do i would recommend waiting for Dawnguard with that character and play Skyrim again with a different one i know it's a repetitive thing to do but it will keep you occupy

Roleplay a character.

Make a character completely opposite to your own ethics/Ideas/whatever.

Do things that the game doesnt tell you to.

Example: My character:

Nord werewolf

Hates magic and elves (specially thalmor)
Doesnt use anything except good ol' trustworthy steel.

I see thalmor? I eat thalmor.

I see a rock that looks wierd in the distance?
I head in that direction and accept whatever adventure awaits.

I only pursue skills my character is interested in, no magic perks, no archery/sneaky perks.

Try and play out a characters life instead of just making it a game.

And the most important thing: take breaks.

All skyrim all the time and you will get bored. If you dont feel like playing give it a day or two.

Visit a friend, watch a movie, even play another game. When you come back it will be like playing a fresh game again.

Start Over. Try doing a time of playthrough you've never done before. There's so many different kinds.

Sword and Shield, Using a big axe, Dual Spell Casting, Necromancer, Archer, Werewolf, Vampire, Stealthy Assassin, or play as a race you never normally play as.

Just wander around the wilderness for some time. Turn off the minimap and investigate what you yourself find interesting and stop fast-travelling if you are.

Also try RP-ing. I enjoyed my second play-through more than my first because on my first char he just ran around doing all the quests he could whilst the second was an arrogant Dunmer Vampire who would rather kill someone than help them and would feed on them if they asked for help.

Play a different game (Mount and Blade is 75% off on steam today), then come back to Skyrim when the DLC is released and make a new character.

Steal cutlery from every house you see and then dump it on your house's floor.

There are games that are released as free games by the authors on the internet. Download one and play. Super Cult Tycoon 2, for example.

I made a Thor character! A Nord that wields lightning bolts and a lightning enchanted mace who doesn't take crap from anyone!

You could pretend that your character has a mental breakdown and have him/her start massacring all the non-essential NPCs in the hold capitals.

Roleplay! Create your character with the intention of telling the story of his or her life.

Who is your character? Why was your character sent to Helgen for execution? How did your character react to the Dragon attack? Make decisions that your character would make, as opposed to making decisions that you want to make.

And then check the time, and realize that you've just spent 12 hours playing Skyrim non-stop. The game tends to do that ...

Roleplay is definitely the best advice you can be given. Stop fast travelling, it runs immersion. Specialise. Stay away from the MQ until later. Give your character a life, rather than just run around doing quests, etc.
