Ok there are probly other threads like this and im sorry about that, but I would like to start again as a character that won't be involved in the dlc but will keep me til then. So can you lot just chuck sugestions at me and tell me how they would work. Feel free to ad rp. And also if you know how i could defend myself without lvling up combat skills I know one such way which is using fists but I wasent sure if thats effective when you lvl up from all the none combat skills and enemies become stronger. Thankyou.

You can level conjuration. That way your summons will do all the necessary combat.

you could go for an alchemist/smith/merchant character

might wanna do smith so you can pick a weapon skill (cant forge a proper blade if you cant use it), if you dont you're going to have a hard time doing any fighting

could travel between towns on a horse running from combat whenever possible

Conjuration and Illusion are your friends. Summon Atronachs to do the fighting for you, or get the enemies to fight each other. And Restoration and Alteration will keep you alive if you get stuck. Try a mage who looks down his/her nose at weapons as beneath them, and who views destruction as the lowest form of magic.
Illusion requires a lot of the perks, and dual casting, to work on tougher enemies, but goes wonderfully with sneak. Note it won't work on Undead or Dwemer constructs until you have mastered the school and taken that perk, against them it's summon or run.
For stones, the Steed lets you move (run away) in full heavy armour if you want to wear any, the Atronach gives 50% spell absorption, and the Lord only gives 6% damage mitigation, but 25% resist magic.
And don't forget to get followers to do the fighting for you, that's what they are for.

There is no such thing as non-combat in Skyrim, you can't complete almost any quest, no matter how trivial, without getting your feet wet whether because of the quest directions or merely because of the environment you travel through.

well, just dont go talk to balgruuf then

pick any character you like and stay away from the main questlines that end up in you having a title and have fun while you do it

just playing a hunter camping in the wilderness has its charms too

Some quests force you to kill though. Like the Abandoned House in Markarth quest.

It's hard to suggest when we don't really know what you want to do? if you want to just play a thief well raise sneak, lockpick and pickpocket with some alchemy to reverse pickpocket poisons. If you want to dungeon dive conjuration and illusion are great for making enemies fight themselves or calm or turn undead.

If you really want some fun be a passive herb gathering alchemist by day and a werewolf by night?

You could RP an "artisan and trader" sort of character.

Your primary skills will be smithing, enchanting, and speech. You would make powerful gear and equip your followers with it, so that they can serve as your bodyguards and protect you from any threat.

Something like this:

Alchemy is for restoring health or turning invisible if things go sour. Restoration is for "healing hands" to heal your bodyguard. I think I got all bases covered.
