There is a lot to love about Skyrim...but I think what has impressed me the most is the art design. The character models, landscapes, towns, the sky. The dungeon designs are my favorite of all the Elder Scrolls games, from Dwemer ruins to the green grottos.
I love the environment most of all, I can get completely sidetracked for hours by just exploring, seeing the random encounters, and entering locations I discover on the way to a quest.

While I don't like most of the quest and story aspects of the game I agree with most of the above. Landscapes are looking amazing, towns are interesting, dungeon tilesets look marvelous, especially caves. Character apparel designs are also great, it just lacks that diversity between armors, weapons and clothing and ability to match them together.
I love when I catch a glimpse of the sky (I always play third person). It's so well done and I would say it's truly magnificent for a passive feature many look over.
