Skill training, it can get costly at high levels, also at high character levels, leveling up slows down greatly.

Also houses are a good purchase.

Buy something really expensive, drop it in a busy town and see people fight over it. Let the victor keep the spoils.

Then do it again :D

If you were to try and drop your gold it would all appear as one coin.

Invest in stores

you could put it in the chest/safe in any of your houses? I use it as an excuse to bring my housecarls back home, so I can pay them for helping me in my adventures, either with gold, or gems, and usually a bottle of wine or mead, then I let them stay home for a few days to have their fun.

Try collecting a full set of something very expensive, like one of every type of magical ebony weapon. So every time you see one in a merchant's inventory you have to grab it for your set and lose some gold.

simulate an arrest by some corrupt guards that threw you inside markath's prison and took all your money, never get that back, forget about the prisioner's chest, break out the prison and never get back until fully financial recovered and geared enough to wipe them all out, and at the end pay the fine.

I dump 1,000 gold in a random barrel or chest every time I enchant something. Some sort of equivalent exchange rule I use for forging a soul to an item to make it more powerful.

EDIT: And I [my character] has a weakness for flawless gems. I buy them all.
