Is it possible to see what changes an ESP has made (the records it has modified) in the CK?. Like some sort of filter.

Yes - when you load the CS in the window where you select the esp to load (File - Data) highlight the esp you want info about and select Details ... -- this brings up a window that lists all of the changes the mod makes.
