First off, smithing would have been more useful if Bethesda hadn't removed degradable armor and weapons, or armor that can be damaged. It could have been a way to repair damaged weapons and armor. However, the rate that it could of ben damaged should be alot slower than from Olivion.
Secondly, I think it would have been cool if armor changes in appearance according to it's state. For example, when you make armor Fine, maybe it becomes shinier, or the shoulder armor is added, or you could add horns to your helmets once they become Superior and stuff like that. Also, if armor and weapons were degradable, they would begin to fall apart. Like cracks in the metal, or it begins to rust, or it gets dents. Same thing with weapons. Wouldn't it be cool your in an epic dragon battle (if dragons were more epic) and all the sudden your ebony sword shatters after hours and hours of use, and your forced to change your combat strategy on the fly?! It would add a whole new layer of depth to the game. Of course, players with a higher smith skill would have a hard time getting their armor and weapons to break or damage.
Number three would be the ability, once your smithing skill is high enough, to mix materials, like ebony and glass to create completely new armor and weapon types. This would add tons of customization to the game, and give players a bigger incentive to focus on their smithing skill. For me personally, I would make a light armor out of leather with ebony shoulder plates and ebony chainmail. It would also apply to weapons. There isn't enough options for light armor if you ask me. At least cool looking ones.
Lastly, and this isn't a big deal, but i wish you could name everything that you forge.
