You have to record an empty sound file so the dialogue doesn't play instantaneously.

Where your info dialogue is, double click the response, make sure your NPC has a voice type, and then hit records and save.

The subtitle text only appears so long as the spoken words take. When there are no spoken words, the subtitles vanish in an instant.

So you need a sound file that is as long as you want the subtitles to appear. Whether the sound file is a spoken sentence or just 5-10 seconds of silence is up to you.

Perhaps a screenshot of one of your problem dialogues would help.
