Can version control save my mod?

Ok so I have just recently found out about version control and I have a couple of questions:

1. If I were to create a blank .esm and then merge my .esp into it using version control, would this correct any problems tesvsnip may have written into my .esp?

2. Now that we can make .esm's the Bethesda way, does it matter any more what types of things go in them? If no, what things should go in the .esm and what should go in the .esp?
