I was riding towards Whiterun one day and I got attacked by a dragon. I was losing health fast and then I realized I was being attacked by two dragons a frost and fire one. So then I called a Dragon with my shout. So now I'm sitting here looking at a all out war moment. I was stunned so I decided to make my way to Whiterun and as soon as I get there I look at the sky again and realize that their still fighting. A couple days later in skyrim time they were gone.

Depending on my character's level, it could be fun fighting two dragons at once. Having high resistance to fire and frost would help, obviously.

I've run into two dragons at once a couple of times, it's always South Southeast from Rorikstead, across the plains. Epic stuff, I did a lot of bobbing and weaving, stayed in motion, circling the dragons as much as possible. Nearly died a few times, but managed to squeak through both encounters.

I never got the shout to summon a dragon, so I've not had chance to experience dragon vs dragon... unless you count me being attacked by two dragons on a cliff face and they kept getting in each others way, lol
