two handed?

I've never actually tried two handed because it just doesn't seem attractive to me, is it actually fun?

To me, yes. There are some cool kill-cams for two-hand weapons, and many unique and powerful two-hand weapons in the game. It's a slower-pace fighting style for sure, and missing on a power attack leaves you vulnerable for much longer than if using a sword and shield. Plus it uses more stamina. To me, it's a bit harder, especially early on, but still fun.

Try being a "Barbarian", Two-Handed with Light Armor. It requires a more fluid, mobile playstyle and you won't find yourself quite as easily drained as if you were trying to go toe-to-toe with someone with a claymore while wearing full plate.

Bonus points if you're a Nord, their early game bonuses are - predictably - custom tailored to it.

my characters are one handed/destruction (pretty generic) mage and archer, what's you weapon of choice?

Depends on what you like really. If you prefer stalking your victim and quietly slashing their throut, then that is what you like. If you prefer charging head first into battle and turning your victem into a red ooze on the floor in a single strike, then go for it. 3rd person view helps so you can quickly respond to being flanked, as well as going with an Orc. Their Berserker Rush ability can quickly cut through a large, weaker mob; or give you that edge you need to survive a tough boss-level fight.
