If you dismiss Lydia and then have her follow you again, her default bow? is added again. This increases her load by 7lbs...each time. So, before long she can no longer carry anything you try to give her or incase you want her to equip better gear.

I know that you can ask her to pick up stuff off the ground (unless that bug has been fixed), but she will never equip better inventory that way.

Most people that use followers swear by Wabbajack, think I may take on a follower just to try it out.
