In an attempt to stay entertained while waiting for Skyrim, me and my friends decided to try and come up with a lore fitting reason for M'aiqs immortality.
People have wondered how he could be alive 200 years later.
Not to say that he needs a reason, we know he is Bethesda's easter egg.
Theory:
I beleive that M'aiq must have been alive at the time of the Warp in the West. Until then he could have been a normal Khajiit. After the events of Daggerfall he may have somehow been affected by the warp (this may be evidenced by his comment on how fragile dragons are.--- I remember him referencing fragile dragons but I cannot find a quote, can someone back me up?)
From the events of the warp in the west he may have become destabilized with the timelines, since he was completely aware of what was happening unlike most others.
Being -out- of linear time would possibly give him the ability to appear at any point in time, maybe even at any place. He may even run at normal speed (time just being slower for him).
I have heard suggestion on the forums, though with little proof so far to back it up, that M'aiq could have possibly learned that he is in fact just a game character. He would certainly have enough time to gain this type of knowledge (since time really would have no meaning for him) and he seems aware of what "people say" on the forums.
Realizing his position, he may have lost interest in life. Immortality and knowledge of everthing in the elder scrolls universe would make him very bored with nothing left to do. He may have taken this opportunity to become M'aiq -the liar-
He would have of course realised that the PC was not an NPC, and his only means of fun would be to screw with them. He could drop hints or make remarks that would leave people clueless and searching, including amused.
When he gets bored of his subject, he simply moves on to the next place he knows they will meet....
We may have been dealing with a very powerful character this whole time!
Or there is the possibility it is a long line of Khajiits with a skooma addiction...

I am no lore expert and I have no idea if this is even actually lore friendly, if somone knows more than me can you explain if this could be possible?
