So i finally decided to utilize the two handed approach to swords and i am wondering to myself "is there any way to increase this attack speed?"

i like the idea of having a large weapon but it seems i get hit 40 times while hitting my enemies a few. Even though those "few" strikes do more damage i am susceptible to attack.

That's the whole point of two-handers...
