I currently have daedric armor and its rating is at

daedric armor 237

daedric boots 102

daedric gauntlets 102

daedric helmet 114

but I just noticed that if I put it inside a chest or a closet and get it back my daedric armors rating goes down to 189 and the same thing happens with everything else they loose armor rating, I dont think this used to happen before but im confused I reloaded an earlier save where it has its original armor rating but now I am worried that if I take it off or store it and want to use it again the armor rating wont be the same.

Did you take it back out of the chest and put it all on again? Do you have the perks that increase the AR with a full set?

Viewing it in a chest will not grant the set bonus.

Does it still have the lower armor rating when you are wearing all of it? There are perks that increase your armor rating if you are wearing four pieces of heavy armor, and/or wearing all four pieces of a matched set. I don't know but maybe if you are looking at their rating while not wearing them, but have the perks, the bonus you used to get from the perks while wearing them will not be figured into the number. If you put them all on at the same time then the bonus from the perks should go into effect.

It's thrown me for a loop more than once when I look at gear that I don't have equipped. I think weapons may be the same way, bonuses you've earned to their damage rating with various perks don't show up until you've actually equipped them.
