I expect Skyrim's crown-jewel DLC next, something between Dawnguard and Shivering Isles in size.
Hearthfire is such a small DLC that probably only a few devs worked on it. It's a perfect filler DLC to reduce the impatience of the fanbase in the wait for a bigger one. Since before the release of Dawnguard (well over 3 months ago) most of the devs that still work on Skyrim are probably working on this next DLC.
Remember that Skyrim sold exceptionally well, especially compared to Bethesda's previous releases. This means that Skyrim DLC's have a far bigger audience than previous games as well, and they are relatively easy to make (compared to making a new game). At some point they will ofcourse stop with DLC's because the audience of DLC's practically always shrinks over time and never grows, so at some point putting the full team on a new game is the wiser option. It will just take Skyrim a bit longer to reach that point due to it's popularity. Also, we know from interviews that Bethesda was doubting whether to wait with Skyrim for the next generation of consoles. Odds are that they do wait for the next generation of consoles with their next game, and thus will stick to Skyrim DLC's a bit longer.
I think it's reasonable to expect at least two more mid-large DLC's.
