I can max it out and get 60 fps no problem. But I have a 120hz monitor and I can't get a constant 120 fps at max settings. So you can max it out... but what fps you get is the more important question. I'd say you can probably get 50+ fps for sure. Beyond that I don't know because I don't know how much better or worse your setup is than mine.
CPU: i7-2600k quad-core 3.4 GHz (oced to 4.5 GHz)
GPU: MSI Lightning GTX580 3GB 832MHz (oced to 925 MHz)
RAM: G-Skill Ripjaws 16GB DDR3/1333 MHz CAS-7 1.5v
HDD: Vertex 3 64GB SSD - 3x 1TB Samsung F3's in RAID0 - 1X 2GB Samsung F4 (backup)
PSU: Silverstone Strider Gold 1200w (was planning on SLI GPU but never did it)
OS: Win7 Ultimate x64
Mobo: Asus Sabertooth P67
Edit:
I'm also running @1080p. I assume you are too. If you are running at a higher resolution then it's going to reduce your fps more, a lower resolution will raise your fps more.
Edit Edit:
I'm also running several mods... I forgot about that. That's also going to have an effect. Out of the box you will have no problems maxing out Skyrim. Once mods are added... someone with a similar system, setup and mods needs to tell you.
This game relies more on CPU than GPU. So it's not likely to run as good as it does for me since I'm at 4.5 GHz.
