Quick question, can I still name my potions, crafted armor, and enchanted items, etc?
Or do they all follow a strict recipe like New Vegas?

I assume so, i really doubt this would of been left out of Skyrim but since i dont have my copy yet (epic day of frustration) i cant say for sure.

I hope so, how else can i make my legendary - Uber Sword of Epicness! (yes my naming items is original >.> )

Well, from what I've seen it doesn't look like you can name items, so I'm just seeing if anyone can confirm it one way or another.
