Personaly, I play a Bosmer fresh from Valenwood who is an Archer, Sneek, One handed, Duel wielding small axes. (favorite are the primitive looking foresworn axes), and of course Cannibal.
He's a refugee who is fleeing the Thalmor after rebelling unsuccesfuly against them. He goes to Skyrim to join the rebellion there, joining the Stormcloaks. He's usually a complete moralfag, but his morals are not always what humans consider normal. He's tried to stay true to his native ways, but will eat some foods with plant material in them since they aren't from Valenwood. He does well for himself hunting the violent bandits who threaten the good folks of Skyrim, and generally tries to get along with everyone else and deffend racial tollerance and religious freedom.
He travels with Eola, who creeped him out at first to be honest, but is grateful to have someone with him who isn't bothered by his traditions, and who enjoys adventuring as much as him. He'd marry her if he could, I think. It's almost like they're married, in an unconventional daedric manner, I figure. They travel skyrim seaking artifacts and power to one day weild against the Thalmor. There are some lines he will not cross for power, though... he will not aid Mehrunes Dagon, for example.
There are other origins and builds that could work fine, too, though. Anyone could have a story as to why they became canibalistic. You could be a psychopathic daedra worshiper who likes killing and sees canabilism as just another useful ability... could join the Dark Brotherhood as well.
Or you could have resorted to canabilism during the atrocities of the Great War to survive. A tortured soul who just wants to one day deffend his or her people against the Thalmor who surely are not done exherting control over Tamriel.
These two concepts could work with any race. There are no race penalties in Skyrim, and the benifits of canibalism could serve any build, warrior, mage, or stealth. It's just a matter of working it into your role play.
