Change sides in the war?

I have played Skyrim since release. I decided to fight with the stormcloaks against the imperials and i finished the quest line quite fast. But since The stormcloaks took over, I have noticed their racist and barbaric ways. I was also dissapionted that when the stormcloaks took over a city, the guards outfits were changed to the quite ugly stormcloak armor.
I think that it would be fantastic if you were able to "betray" your current "team" in more ways than in the beginning of the game and during the quest "the jagged crown". This would create a fun and exiting twist to the game as well as giving the player a more sense of freedom.

Yeah it certainly would. But you know, deadlines...

I loved the betrayal quests in Everquest 2. They were long and difficult and when my characters were finally accepted by the other faction I have to say I felt a real sense of accomplishment.

I wonder what Skyrim would have been like if they didn't rush it to meet that release date.

I recall something like this in SI with the Mazken and Aureals. But for Skyrim its just quick 5 minute quests with one outcome for each side which are practically the same as each other.
