My Internet isn't working past 11:00 now and I was wondering if I use the creation kit will what I do in the creation kit effect my game even if I don't have a Internet connect?

Yes, the Creation Kit works just fine without an internet connection. The only functionality you will lose during that time is uploading to Steam workshop.
