I'm getting called Unblooded as a Nord character by that Stormcloak military officer guy in the bearskin. Is this a race recognition bug, or does he like to call everyone unblooded?

Maybe he’s suggesting that you haven’t been in any fights? An insult along the lines of “milk-drinker,” not a comment on racial heritage?

Might be it, but I've already joined the Stormcloaks and now I'm on my first mission with them, oh well. I'll do this first mission and see if he still keeps calling me unblooded

You get called unblooded untill you get a promotion in the stormcloaks

It could also be because Nords are resistant to cold.
