Well an earlier character I had managed to get 750 with an bow, master smith with smithing gear and potion and 4* +47% damage enchants.
Now add an 148% damage potions and sneak attack )

maybe with dual wielding and dagger backstab

Yep, fortify one-handed potions with similar enchants on appropriate armor pieces and the backstab perk (15x damage) and nothing is safe from the one-hit wonder
