Is there any way I can make a summoned creature immediately turn hostile on the player?-akin to how I presume the Ash Guardian works in Dragonborn. Without the source code for Dragonborn, I'm unable to discern for myself how this could be done.

Never did it myself but I believe you should play around with the Aggression actor value. Also, DB source code has been released yesterday.
