Think there are normal dragons, blood dragons, frost dragons, fire dragons, elder dragons and ancient dragons.

I think that's the rough order of how powerful they are too, but it's off the top of my head so I could be wrong.

You got it right, except blood dragons are more powerful than frost :)

How do you recognize them? are they different colour and name tags?

I don't think this is right. I encountered Blood Dragons well before Frost Dragons.

And I can take out Blood's rather easily at this point, but still struggle to take on a Frost dragon one-on-one (in fact, I can't)

Different dragon sub-types are named according to the sub-type. IIRC Frost Dragon is the only one with a set elemental affinity. As a mage I start with Ice Spike until I spot (or hear) what breath they use.
